Cooking with Becky: Bacon and Onion Quiche Recipe



You will need:
* an 8 inch pie dish
*375g short crust pastry
* 1 onion, diced
* 6 rashers of bacon, chopped
* approx 1 cup of frozen mixed veg
* grated cheese
* 200mL milk (I used low fat skimmed milk)
* 2 eggs
* Pepper

1. Preheat oven to 200 degrees Celsius
2. Sprinkle some flour and roll out pastry until about 1mm thick.



3. Line pie dish with pastry (cut away extra pastry) and prick the base with a fork.




4. Place sheet of greaseproof paper inside and fill with baking beans (or dried chickpeas!).


5. Place in oven and cook for 10 minutes, then remove beans and cook for an additional 5 minutes. Remove from oven and let base rest.


Whilst cooking the pastry...


6. Measure out vegetables and well... cook them :) (I'm using frozen peas, carrots, green beans and sweetcorn, you could use whatever you want, spinach would be nice too!)




7. Dice onion and chop bacon, cook until golden brown with a splash of oil.


8. Whisk milk and eggs together, add a pinch of pepper
9. Grate some cheese (as much as you desire)

Assembling 

10. Sprinkle a layer of cheese onto pastry base


11. Add bacon and onion layer


12. Add vegetable layer


13. Pour egg and milk mixture over the top


14. Add some cheese and cook for 30 minutes (or until a knife which is inserted comes out clean).






And enjoy!

You can eat it warm or wait for it to cool, leftovers are perfect for lunch the next day!

p.s. The leftover pastry can be used to make jam tarts!
