Guilt Free Grub: Healthy and Delicious 3 Ingredient Cookies

3 ingredients? Cookies...? Guilt free....?  I know what you're thinking, is this make believe? It's not! And I'm going to show you how.

I've found seen many different recipes and takes on these cookies but this is the recipe that I have come up with and enjoy for a nice snack when I'm craving something 'bad' like sweets, cakes or cookies but have NO added sugar whatsoever.




Prep Time: 5-10 minutes
Baking Time: 15 minutes


Preheat oven to 350 F (176 C) .













Cook for 15 minutes or until golden brown.

This recipe is really just a back bone for you guys, you can literally create so many varieties and make them to your own personal tastes.  Instead of raisins you can add nuts (walnuts, pecans, almonds), fruits (cranberries, dried apricots, dried prunes), chocolate chips, shredded coconut, spices, vanilla extract and so many things.

I personally enjoy them just like this however I would add a hint more cinnamon next time.

Cooking with Becky: Chocolate Chip Muffins

*Recipe from Joyofbaking, if you are looking for a easy, delicious chocolate chip muffin then you should try this out!*

Ingredients


  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 2 large eggs
  • 2/3 cup (180mL) milk
  • 1 1/2 teaspoons pure vanilla extract
  • 2 cups (260g) all-purpose flour
  • 2/3 cups (135g) granulated white sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup (240mL) chocolate chips

Cinnamon topping

We used Cinnamon sugar that was pre-brought, but if you only have ground cinnamon:

  • 1 tablespoon granulated white sugar
  • 1/2 teaspoon ground cinnamon

Recipe:

  1. Measure out butter and melt in a saucepan and leave to cool whilst preparing the batter
  2. Preheat oven to 190 degrees C (375 F).
  3. Place muffin cups into muffin tin (you might want to butter the inside of the muffin tin if you find it necessary)
  4. Mix together the wet ingredients in a jug (eggs, milk and vanilla extract)
  5. In a large bowl mix together dry ingredients (flour, sugar, baking powder and salt) *If you used salted butter leave out the salt* 
  6. Add in the chocolate chips.
  7. Stir together dry ingredients with a spatula and add all wet ingredients.
  8. Stir until everything is combined (to retain the moisture).
  9. Fill the muffin cups evenly
  10. Sprinkle the cinnamon sugar over the muffin batter.
  11. Place in oven for 18-20 minutes (Ours were smaller so we only cooked them for 15 minutes and they were perfect). *Test with a toothpick*
  12. When finished, place on a cooling rack.
  13. Freeze the muffins or place them in a airtight container.
  14. Enjoy!

Makes 12 regular sized muffins (We made 16)

Cooking with Becky: Bacon and Onion Quiche Recipe



You will need:
* an 8 inch pie dish
*375g short crust pastry
* 1 onion, diced
* 6 rashers of bacon, chopped
* approx 1 cup of frozen mixed veg
* grated cheese
* 200mL milk (I used low fat skimmed milk)
* 2 eggs
* Pepper

1. Preheat oven to 200 degrees Celsius
2. Sprinkle some flour and roll out pastry until about 1mm thick.



3. Line pie dish with pastry (cut away extra pastry) and prick the base with a fork.




4. Place sheet of greaseproof paper inside and fill with baking beans (or dried chickpeas!).


5. Place in oven and cook for 10 minutes, then remove beans and cook for an additional 5 minutes. Remove from oven and let base rest.


Whilst cooking the pastry...


6. Measure out vegetables and well... cook them :) (I'm using frozen peas, carrots, green beans and sweetcorn, you could use whatever you want, spinach would be nice too!)




7. Dice onion and chop bacon, cook until golden brown with a splash of oil.


8. Whisk milk and eggs together, add a pinch of pepper
9. Grate some cheese (as much as you desire)

Assembling 

10. Sprinkle a layer of cheese onto pastry base


11. Add bacon and onion layer


12. Add vegetable layer


13. Pour egg and milk mixture over the top


14. Add some cheese and cook for 30 minutes (or until a knife which is inserted comes out clean).






And enjoy!

You can eat it warm or wait for it to cool, leftovers are perfect for lunch the next day!

p.s. The leftover pastry can be used to make jam tarts!
